The Best Grilled Salmon with Mango Avocado Salsa Recipe for Summer

Ah, summer. I can just taste it now. The warm nights spent grilling and sipping on good wine. The fresh, ripe produce and summer fruits. We can feel like you’re on vacation without ever leaving your backyard in the summertime, can’t we? There’s nothing I loved more than a grilled salmon recipe. My fiance Kenny recently learned to grill thanks to quarantine, and I couldn’t be happier about this newfound skill. While you can definitely make this grilled salmon recipe in the oven, as well, there’s just something about grilled salmon on a barbecue, isn’t there?!

This recipe is the ultimate healthy summer meal. It’s packed with healthy omega 3’s, protein, and the summer sweetness of fresh summer fruit. It’s paleo, dairy free, grain-free, and it MELTS IN YOUR MOUTH – it’s just the best!!

Have you ever had perfected a recipe so good you make it pretty much once a week? Yeah, that’s me with this salmon. I can’t get enough, and Kenny and I love making it because there’s always a ton of leftovers when you make this recipe for 2 people – meaning SALMON TACOS FOR LUNCH the next day – yesssss please and thank you.

This recipe is adapted from Danielle Walker’s Against All Grain

What you’ll need from the grocery store:

Salmon – 1.5 to 2 lbs – I like to do 2 lbs – this feeds 3-4 people, or 2 people with a good amount of leftovers! 

Butter – I like using this brand of grassfed butter because it’s so much healthier 

Garlic – you’ll need 1 clove

Paprika

Cumin

Chili Powder

Thyme

Cayenne

Mango – 1 large ripe mango

Avocado  – 1 large avocado

Red onion

Limes

Sea salt

If mangoes aren’t available, you can also do this recipe with a peach avocado salsa, or even defrost some frozen mango chunks to use! You can also feel free to add in some chopped tomatoes, or a little chopped jalapeno to the salsa as well. Get creative!

Grilled Salmon with Mango Avocado Salsa

Cook Time: 15 minutes
Total Time: 35 minutes

This ultra-healthy, melt-in-your-mouth grilled salmon recipe will be your favorite dish this summer. With ripe avocadoes and mangoes and a to-die-for spice mix, this is the best grilled salmon there is.

Ingredients

SALMON

  • 1.5 to 2 lbs salmon - I like to do 2 lbs - this feeds 3-4 people, or 2 people with a good amount of leftovers! 
  • 4 tablespoons melted butter
  • 2 cloves garlic, crushed
  • 2.5 tsp paprika
  • 1 tsp sea salt
  • Pinch of cracked black pepper
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp cayenne, or a little extra for added spice
  • 1/4 tsp thyme

SALSA

  • 1 large avocado
  • 1 large ripe mango
  • 2 tablespoons chopped red onion
  • 1 tablespoon chopped cilantro (optional)
  • Juice of 1-1.5 limes
  • 1/2 teaspoon sea salt

Instructions

  1. Mix the melted butter and all of the spices in a small bowl. Rub the spice mix all over the salmon in foil (mainly on the not-skin side but getting a little on the other side as well). Leave at room temperature while the grill heats up.
  2. Preheat the grill to a medium-high heat.
  3. Combine all salsa ingredients in a bowl and refrigerate until the salmon is ready.
  4. Grill the salmon wrapped in foil on the grill for about 15 minutes, or to your liking.
  5. Salmon should flake easily, and not be overcooked.
  6. Serve hot with the mango salsa on top.

Notes

I like my salmon medium rare and 15 minutes is usually perfect if it's a large, thick slice of salmon. Less time for thinner salmon slabs!

Get creative with your salsa! You can add sliced grape tomatoes, peaches, or anything you want!

Always opt for wild-caught salmon when possible. I prefer King or atlantic salmon to sockeye personally.
