The BEST Flourless Avocado Brownies Recipe!!

Okay, I know what you guys are thinking – what do you mean AVOCADO brownies? Surely Christina mis-typed something here. But this genius fudgey brownie recipe uses healthy avocados instead of oil or butter and oh. my. god. These are decadent. 

This delish flourless avocado brownie recipe comes from my friend Maxine, who runs the amazing cooking instagram @Maxiskitchen. I reached out to her for a recipe recommendation for something sweet to make this weekend and she did not disappoint with this healthier flourless brownie recipe

Maxine and I grew up together in the small town of Orinda, California and she’s one of the most friendly, warm and engaging people I’ve ever met. FYI – I always use ghirardelli premium baking cocoa powder in every brownie recipe I make. It’s by far the best out there and cocoa powder is something you should never skimp on – please,  please don’t make these with nestle cocoa powder if you can avoid it – good cocoa quality makes a big difference! Also I always add a little extra vanilla in every cookie or brownie recipe I make. (Another thing I never skimp on, this is my favorite vanilla brand

Avocado Brownies

Avocado Brownies

Prep Time: 10 minutes
Cook Time: 45 minutes
Total Time: 55 minutes

These ooey-gooey too-good-to-be-true fudgey brownies have no butter, oil or refined sugar, and are SO good. Recipe comes from @MaxisKitchen on instagram

Ingredients

  • 1 Ripe Avocado, Mashed with a fork
  • 1/2 cup good quality cocoa powder
  • 2 eggs
  • 1 cup raw coconut sugar + a more if you like them a bit sweeter
  • 2 tablespoons cashew butter or almond butter
  • 1 tsp vanilla extract
  • 3/4 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup chocolate chips

Instructions

  1. Preheat oven to 325* and line an 8x8 pan with parchment paper
  2. Mix together all ingredients and pour into the pan; sprinkle some additional chocolate chips on top
  3. Bake for 40-45 minutes, or a little less depending on how gooey you want them!
  4. Let cool completely and then cut into squares - finish with a sprinkle of Maldon sea salt on top!

Notes

I always add a little extra vanilla in every cookie or brownie recipe I make.

You CAN use a food processor or blender for these but I prefer to do them by hand. If you do use a blender or processor, don't overmix! This will result in cakey brownies.

Don’t skimp on the nut butter, use measuring spoons and a spatula to scrape them out! 

You can add a little more raw sugar if the batter doesn't taste sweet enough!
