How to Make Island Coffee: The Healthy Blended Coconut Coffee I Drink Every Day

So many of you asked for me to post my blended coffee recipe you see on instagram all the time, so here it is!

Last weekend when Kenny and I were celebrating our would-be wedding day, we turned our house into a total island getaway for the day. We kicked it off with these island coconut lattes, homemade banana pancakes with coconut shavings, and a huge tropical fruit salad. Then we made this epic Maui mai tai recipe in the afternoon and zoom’ed our wedding party! It was so much fun and a great way to celebrate, even if we couldn’t be in Maui

But back to the island coffee I am obsessed with drinking every day!  Every day, I blend my coffee with coconut milk (or oat milk!), collagen and coconut oil (or coconut butter) because that quick 20 second blend makes it SUPER frothy, like the smoothest, most delicious, healthiest latte you’ve ever had in your life. Seriously I can’t even go to coffeeshops anymore because I miss this coffee too much. It’ll fill you up and energize you for a great day. 

Here are all the ingredients you’ll need for coconut island coffee:

Coffee – My favorite coffee is this one

Collagen Collagen is a taste-less protein powder that’s SUPER good for your hair, skin, nails and overall health. I put it in my coffee every day and notice such a differerence!

Coconut Milk – I like this brand, but you can use any brand or any milk or milk alternative you like! I’m super into oat milk these days too.

Coconut oil – or coconut butter – I like both but tend to have more oil in the pantry, I do about a half a spoonful.

Stevia for a little sweetener (I like using the liquid drops, I use 4 drops or so, but see how you like it and add more for more sweet!)

Prep Time: 5 minutes
Total Time: 5 minutes

This frothy dairy-free coconut coffee is packed with protein and my favorite way to start the day!

Ingredients

  • Coffee
  • Coconut Oil (1 spoonful)
  • Coconut milk (1/4 cup or however much you like)
  • Collagen (1 Tablespoon)
  • A dash of cinnamon
  • A little stevia

Instructions

  1. Place all ingredients in blender and blend for 20 seconds.
  2. BOOM! Coconut island coffee.
  3. Relax and pretend you're on vacation somewhere tropical.

Notes

You can sub any milk you like for coconut milk - I make this with oat milk a lot too!
